Description

This Asparagus Stuffed Chicken recipe features tender chicken breasts stuffed with provolone cheese and fresh asparagus, baked to perfection and served with a creamy artichoke and spinach dip sauce. It’s a flavorful, elegant dish that’s perfect for a family dinner or special occasion.

Ingredients

Scale

Chicken and Filling

  • 6 (5-6 ounce) boneless skinless chicken breasts, pounded to ¼-inch thickness, seasoned with salt and pepper
  • 6 slices provolone cheese
  • 24 fresh asparagus spears, trimmed
  • Toothpicks

Sauce

  • 1 (8 ounce) package cream cheese
  • 1 cup 2% milk
  • 1 packet Artichoke & Spinach Warm Dip Mix
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with aluminum foil and spray it with no-stick cooking spray to prevent sticking.
  2. Prepare Chicken: Lay out each pounded chicken breast and place a slice of provolone cheese on top. Then, layer 4 asparagus spears over the cheese. Carefully roll up each chicken breast, securing the roll with toothpicks to keep the filling inside. Arrange the rolled chicken breasts seam-side up on the prepared baking sheet.
  3. Bake Chicken: Place the baking sheet in the preheated oven and bake the stuffed chicken breasts for approximately 15 minutes, or until the internal temperature reaches 165°F (74°C) when checked with an instant-read thermometer.
  4. Make the Sauce: While the chicken is baking, prepare the sauce. In a microwave-safe bowl, microwave the cream cheese on HIGH for 1 minute until softened. Whisk in the milk and the Artichoke & Spinach Warm Dip Mix. Return the mixture to the microwave and heat for an additional 30 seconds. Then, add the grated Parmesan cheese and microwave again for 1 minute or until the sauce is fully heated through and smooth. Stir well to combine.
  5. Serve: Once the chicken is cooked, remove it from the oven, discard the toothpicks, and drizzle the creamy artichoke and spinach sauce over each portion. Serve immediately and enjoy your flavorful asparagus stuffed chicken.

Notes

  • Ensure chicken breasts are pounded thin to allow for easy rolling and even cooking.
  • Use fresh asparagus spears trimmed to fit inside the chicken rolls.
  • An instant-read thermometer is essential to confirm chicken doneness for food safety.
  • If you don’t have a microwave, the sauce can be made on the stovetop over low heat, stirring constantly until smooth.
  • To prep ahead, you can assemble the chicken rolls and refrigerate them before baking.
