Egg Mixture
- 8 large eggs
- ¼ cup milk or half-and-half

Vegetables & Cheese
- 1 cup chopped asparagus (trimmed and cut into 1-inch pieces)
- 1 cup sliced mushrooms (cremini or white)
- ½ small onion (diced)
- ½ cup shredded cheese (cheddar, Swiss, or feta)

- 1 tablespoon olive oil or butter

Instructions
- Prepare the Egg Mixture: In a bowl, whisk together the eggs, milk, salt, and pepper until fully combined and set aside.
- Sauté Aromatics: Heat the olive oil or butter in an oven-safe 8–10 inch skillet over medium heat. Add diced onion and cook for 2–3 minutes until softened and fragrant.
- Cook Vegetables: Add sliced mushrooms and chopped asparagus to the skillet. Sauté for 4–5 minutes, stirring occasionally, until the vegetables are tender and any released liquid has evaporated.
- Combine and Add Cheese: Evenly spread the sautéed vegetables in the skillet. Pour the egg mixture over them, making sure it is evenly distributed. Sprinkle shredded cheese on top.
- Set on Stovetop: Let the frittata cook on the stovetop over medium heat for 2–3 minutes, allowing the edges to start setting without browning excessively.
- Bake in Oven: Transfer the oven-safe skillet to the preheated oven at 375°F (190°C). Bake for 12–15 minutes, until the center is just set and the top is slightly golden.
- Cool and Serve: Remove from oven and let the frittata cool for a few minutes. Garnish with fresh herbs if desired. Slice and serve warm or at room temperature.
