Egg Mixture

  • 8 large eggs
  • ¼ cup milk or half-and-half

Vegetables & Cheese

  • 1 cup chopped asparagus (trimmed and cut into 1-inch pieces)
  • 1 cup sliced mushrooms (cremini or white)
  • ½ small onion (diced)
  • ½ cup shredded cheese (cheddar, Swiss, or feta)

Cooking Fats & Garnish

  • 1 tablespoon olive oil or butter
  • chopped fresh herbs for garnish (optional)

Instructions

  1. Prepare the Egg Mixture: In a bowl, whisk together the eggs, milk, salt, and pepper until fully combined and set aside.
  2. Sauté Aromatics: Heat the olive oil or butter in an oven-safe 8–10 inch skillet over medium heat. Add diced onion and cook for 2–3 minutes until softened and fragrant.
  3. Cook Vegetables: Add sliced mushrooms and chopped asparagus to the skillet. Sauté for 4–5 minutes, stirring occasionally, until the vegetables are tender and any released liquid has evaporated.
  4. Combine and Add Cheese: Evenly spread the sautéed vegetables in the skillet. Pour the egg mixture over them, making sure it is evenly distributed. Sprinkle shredded cheese on top.
  5. Set on Stovetop: Let the frittata cook on the stovetop over medium heat for 2–3 minutes, allowing the edges to start setting without browning excessively.
  6. Bake in Oven: Transfer the oven-safe skillet to the preheated oven at 375°F (190°C). Bake for 12–15 minutes, until the center is just set and the top is slightly golden.
  7. Cool and Serve: Remove from oven and let the frittata cool for a few minutes. Garnish with fresh herbs if desired. Slice and serve warm or at room temperature.
