- 2 large eggs

For the crisp topping:
- 1/2 cup old-fashioned oats
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup unsalted butter, cold and cubed
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan and bake for 8 minutes.
- In a bowl, beat cream cheese and sugar until smooth. Add sour cream, eggs, and vanilla. Pour over crust.
- Toss apples with sugar, cinnamon, and nutmeg. Spread over the cheesecake.
- Mix oats, flour, brown sugar, and cinnamon for topping. Sprinkle over apples.
- Bake for 45–50 minutes. Cool, then refrigerate for at least 4 hours. Slice and serve.
