For the crisp topping:

  • 1/2 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan and bake for 8 minutes.
  2. In a bowl, beat cream cheese and sugar until smooth. Add sour cream, eggs, and vanilla. Pour over crust.
  3. Toss apples with sugar, cinnamon, and nutmeg. Spread over the cheesecake.
  4. Mix oats, flour, brown sugar, and cinnamon for topping. Sprinkle over apples.
  5. Bake for 45–50 minutes. Cool, then refrigerate for at least 4 hours. Slice and serve.
