- ½ cup dry white wine or chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the fettuccine or spaghetti according to package instructions until al dente. Drain the pasta, reserving ½ cup of pasta water, and set aside.
- Cook the Prawns: Heat olive oil in a large skillet over medium-high heat. Season the prawns with salt, black pepper, and smoked paprika. Cook the prawns for 1 to 2 minutes on each side until they turn pink and are cooked through. Remove from the skillet and set aside.
- Sauté Garlic and Chillies: Reduce the heat to medium, then add the minced garlic and red chilli flakes to the skillet. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
- Deglaze the Pan: Pour in the white wine or chicken broth to deglaze the pan, scraping up any browned bits, and let it simmer for 2 to 3 minutes to reduce slightly.
- Add Cream and Cheese: Stir in the heavy cream and grated Parmesan cheese. Let the sauce simmer for another 2 to 3 minutes until it thickens slightly.
- Combine and Finish: Stir in the lemon juice and return the cooked prawns to the pan. Toss in the cooked pasta and mix everything together, adding reserved pasta water a little at a time to achieve your desired sauce consistency. Adjust seasoning with salt and pepper as needed.
- Serve: Garnish with chopped fresh parsley and serve the pasta hot.
