Almond Joy Coconut Bites are a delightful no-bake treat combining sweet shredded coconut, toasted almonds, and rich chocolate. Easy to prepare and perfect for satisfying your sweet tooth with a homemade version of the classic candy bar.

- 2 cups shredded sweetened coconut
- 1/2 cup sweetened condensed milk
- 1/2 teaspoon vanilla extract
- 20 whole almonds (toasted)
Chocolate Coating
- 1 1/2 cups semi-sweet or dark chocolate chips
- 1 tablespoon coconut oil (optional, for smoother melting)
Instructions
- Prepare Coconut Mixture: In a medium bowl, mix shredded coconut, sweetened condensed milk, and vanilla extract until fully combined and sticky.
- Form Bites: Scoop about 1 tablespoon of the mixture and form small rectangular or round mounds with your hands. Press one toasted almond into the top of each bite and gently reshape as needed. Place bites on a parchment-lined baking sheet and freeze for 15–20 minutes to firm up.
- Melt Chocolate: Meanwhile, melt chocolate chips with coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
- Dip Bites in Chocolate: Dip each coconut bite into the melted chocolate using a fork, coating all sides and letting excess drip off. Place back on the parchment-lined sheet.
- Chill to Set: Once all bites are coated, chill in the refrigerator for 15–20 minutes or until the chocolate coating is set.
Notes
- Store in an airtight container in the fridge for up to 1 week.
- You can use unsweetened coconut for a less sweet bite.
- For a lighter chocolate coating, drizzle chocolate on top instead of dipping.
