Ingredients
Scale
Chocolate Mixture
- 6 Tablespoons unsalted butter, cut into pieces
- 4 oz semi-sweet chocolate bar, broken into pieces
Cake Batter
- 1 large egg
- 1 egg yolk (from a large egg)
- 3 Tablespoons white sugar
- ½ teaspoon vanilla extract
- 3 Tablespoons all-purpose flour
- pinch of salt
Instructions
- Prepare Ramekins: Grease three 6-ounce ramekins thoroughly with butter or non-stick spray and set them aside to ensure the cakes don’t stick.
- Melt Chocolate and Butter: Place the butter and semi-sweet chocolate pieces in a microwave-safe bowl. Microwave for about 1 minute, stirring every 30 seconds until fully melted and smooth. Set aside to cool slightly.
- Mix Wet Ingredients: In a large bowl, use an electric mixer to beat the egg, egg yolk, vanilla extract, and sugar together until the mixture is smooth and well combined.
- Combine Batter: Add the all-purpose flour, the melted chocolate and butter mixture, and a pinch of salt to the wet ingredients. Stir everything gently until just combined, making sure not to overmix.
- Fill Ramekins: Pour the batter evenly into the prepared ramekins, filling each about halfway to allow room for rising and the molten center.
- Air Fry: Place the ramekins carefully into the air fryer basket. Air fry at 370°F (188°C) for 8 to 10 minutes. The edges should look set but the center will remain soft and molten.
- Cool and Serve: After air frying, use a thick dish towel to remove the hot ramekins safely. Let them cool for about 1 minute. Run a butter knife around the edges to loosen the cakes, then invert each onto a plate. Garnish with whipped cream, fresh berries, or a dusting of powdered sugar and enjoy immediately.
Notes
- Ensure the ramekins are well greased for easy release of the cakes.
- Do not overcook in the air fryer as the molten center is what makes these cakes special.
- Use a good quality semi-sweet chocolate for the best rich flavor.
- Serving the cakes warm enhances the molten lava effect.
- If desired, accompany with ice cream or a sprinkle of sea salt for a gourmet twist.
