Soup:

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups corn kernels (fresh or frozen)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 4 cups chicken or vegetable broth

Additional Ingredients:

  • 1/2 cup heavy cream or Mexican crema
  • 1/2 cup crumbled cotija cheese, plus extra for garnish
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  3. Add Broth & Simmer: Pour in broth, simmer for 10–15 minutes.
  4. Blend & Add Cream: Blend soup until smooth, stir in cream and cotija cheese.
  5. Simmer & Finish: Simmer for 5 minutes, finish with lime juice and cilantro.
  6. Serve: Garnish with cotija, chili powder, and toppings.
