Soup:
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups corn kernels (fresh or frozen)
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 4 cups chicken or vegetable broth
Additional Ingredients:
- 1/2 cup heavy cream or Mexican crema
- 1/2 cup crumbled cotija cheese, plus extra for garnish
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- Salt and pepper to taste
- Optional toppings: chili powder, hot sauce, sliced jalapeños, tortilla strips
Instructions
- Sauté Aromatics: Heat olive oil in a pot, sauté onion until translucent, add garlic.
- Cook Corn & Spices: Add corn, cumin, smoked paprika, salt, and pepper, cook to bloom spices.
- Add Broth & Simmer: Pour in broth, simmer for 10–15 minutes.
- Blend & Add Cream: Blend soup until smooth, stir in cream and cotija cheese.
- Simmer & Finish: Simmer for 5 minutes, finish with lime juice and cilantro.
- Serve: Garnish with cotija, chili powder, and toppings.
